mint brownies
Same brownies. Different color frosting. Both so dang yummy. I get to enjoy back-to-back baby showers for 2 friends that are both having baby girls this summer. Perfect excuse to make these brownies and make them PINK! I took the picture of the green ones years ago, and the pink ones are from Kari's shower last night and there is plenty more for Bri's shower tonight.

[ MINT BROWNIES ]
2 c. butter - melted
3/4 c. cocoa
2 1/4 c. sugar
6 eggs - beaten
Combine above ingredients and mix well. Add the following to the mixture:
2 c. flour
1/8 tsp. salt
2 tsp. vanilla
Bake this brownie layer in a Texas sheet cake pan or two 9" x 13" pans for this amount. Bake at 350 for 15 minutes (add 8-10 minutes if you use two 9" x 13" pans. Cool completely.
Mint frosting
4 c. powdered sugar
1/2 c. butter - melted
5 Tbsp. milk
6 drops food coloring
2 tsp. mint or peppermint extract
Spread frosting on chilled cake and then chill again. Melt a bag of semi-sweet chocolate chips and spread for top layer. Chill.
My friend Rebecca introduced these to me about 4-5 years ago.

Becky, how do you stay so skinny while making so many yummy bites? My gosh your recipes are making me thick and chunky. Ha. No really, they're making me look like I can cook. That's even funnier!

Well, my Aunt Shirley's "Greenies" have competition!
A family favorite since I was a young girl, she made a similar brownie. Every baby shower, bridal shower and party or get-together of any kind featured her famous greenies. I had to laugh at your pink version for your friends' baby showers....she often colors her icing depending upon the occasion as well!
Anyway, I just had to say yours are my new favorite. I made them for Aunt Shirley's birthday on July 1st....she told me to thank that Becky for perfecting them!
Thanks for the recipe and please do keep them coming. Cooking, not so much, but baking I love. Your layouts with your recipes look so amazing! I'd love to see more of your recipes! Please! (hey, maybe in your spare time....ha ha....you could put out a cookbook!).
