pumpkin chocolate chip muffins

The first time I tried these was about a year ago when my friend Karolyn made them for breakfast during a girlfriends retreat/reunion. Good memories (love you guys!). What I like about these muffins (besides the chocolate chips!) is that you barely taste the pumpkin. It's not overwhelming. Not even close. They're very light & fluffy ... not dense.



[ pumpkin muffins ]

1 c. flour
1 c. sugar
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground cinnamon
2 eggs, beaten
1 c. ground pumpkin (canned)
1/2 c. cooking oil
1/3 c. chocolate chips

Mix together. Fill muffin cups and bake at 350 for 20-25 minutes.

Super simple. When the recipe is this simple, I definitely involve the kids. Porter & Claire helped me make some today and we're sharing with some neighbors when we go for a walk later this evening.

schmoopWe have a favorite, very easy pumpkin muffin recipe that is actually low calorie.
1 Cake Mix (I like Orange)
1 small can pumpkin
1 egg
3/4 cup water
Mix together. Pour into cupcake pan. Follow directions on cake mix for time and temp. Enjoy!

My mom makes pumpkin chocolate chip or raisin cookies that are a lot like those. They are light, too, with not too much of a pumpkinny taste. Your so sweet to share these recipes, I did the pretzel hugs and they were a hit!

You are The Evyl Girl with these recipes, woman!!!! Last night I went to 3 stores looking for Andes Mints to make cookies!! [everyone is overflowing with the Halloween candy, not the Andes Mints].

I love pumpkin cupcakes that really taste like pumpkin. Here's an even easier recipe:

1 box spice cake mix, any brand
1 can pureed pumpkin

Mix together well, using a little water to moisten if needed. Pour in cupcake tin. Bake according to box. Allow to cool and sprinkle with powdered sugar.

Now THESE are dense! And pumpkiny! Plus they have no fat [no eggs, oil, milk, etc] and each one has an entire serving of veggies and fiber! mmm!

Love the blog, even though it is a threat to my weaistline.

Scrum!!! Can't wait till I get a chance to bake those too. I want to tell you about a (new to me) popcorn I bought in the grocery store the other day. (I was at "Wally Martus" but it's probably everywhere). Orville Redenbacher's Natural Buttery Salt & Cracked Pepper. IT'S SOOOO GOOD!!!! I remember you telling us about liking the Target chips with cracked pepper. (Those are so scrum too!) Just wait till you try this popcorn. I'm not a huge popcorn fan, but I want to have a bag of this everyday for a snack. (Gonna have to watch that!) I love it so!!! I can only find the snack size bags and they're easy to overcook, so I just put them in for 58 seconds. Hope you get a chance to try them.

P.S. Glad to hear Miss Claire is better. You wouldn't think germs could live in AZ as darn hot as it gets there! You're sweet to worry about your CK class. You did the right thing. Family should come first no matter who we are or what we do in life. But that's why we admire you so much!!!

I can't wait to make the pumpkin muffins! I especially love to add choco chips to everything too!

I really wanted to thank you for the pretzel hugs recipe. We got "booed" the other night (treats from an anonymous neighbor) and now we have to boo 2 other neighbors. I decided to make the pretzel hugs. My kids and I had such a great time making them (even my 4 year olds). Everyone was able to help unwrap the hugs, place them on the pretzels and even add the m&m's. Excellent family time making something for someone else. You are the best!!!

oh, these look good. I have never had pumpkin with something sweet. I don't think we can get canned pumpkin here. Can you use fresh pumpkin, or is there other stuff usually in the can?? Would love to have these for a stamping party I am having Saturday!

I made these for some friends, along with 2 big pots of coffee, Saturday morning. The only thing was that I didn't pay enough attention to the recipe and used a whole can of pumpkin so they were kinda dense, but they were a huge success and were delicious! I'll actually probably do it that way the next time too. Oh, and I did use a little more chocolate...one can never have too much! Thanks again for the delicious recipes you always share! :)
