peppermint fudge
This weekend means that December is officially here and that means ... FUDGE. I double-batched this last night while we decorated the Christmas tree and the fudge is already half gone. Gave some to a few friends this morning and it's a great little hostess gift for 2 parties this weekend. I don't remember where I got this recipe years ago, but I altered the recipe and this is how I make it.

FUDGE LAYER
3 tsp. butter, softened
4 oz. cream cheese, softened
4 c. powdered sugar
6 Tbsp. baking cocoa
1 tsp. milk
1 tsp. vanilla extract
PEPPERMINT LAYER
2 oz. cream cheese, softened
2 c. powdered sugar
1/2 tsp. milk
1/2 tsp. peppermint extract
1/4 c. crushed peppermint candy (about 10-12 candies)
Line the bottom and sides of a square baking dish with foil. Grease foil with butter; set aside. In a small mixing bowl, beat cream cheese. Gradually beat in powdered sugar, cocoa, milk and vanilla. Spread into prepared pan. Chill for an hour until firm. For peppermint layer, beat cream cheese in a small mixing bowl. Gradually beat in powdered sugar, milk and extract. Stir in peppermint candy. Spread evenly over chocolate layer. Chill for an hour or until firm. Using foil, lift fudge from pan. Gently peel off foil and cut into squares.
Notes: A double batch fits well in a 9" x 13" pan and makes about 7-8 dozen little squares of fudge. Also, to crush the peppermint candies, I place them in a thick zip lock bag and use a rubber mallet (soft hammer). This is where my kids like to help!

Ooohhh....this will be one to try this year! I love fudge! I have a butter pecan fudge recipe that's the same way...doesn't stay around very long! ;o)
Your fudge recipe sounds delicious. You have mentioned that you often give your neighbors plates of goodies, what do give them at Christmas time?

I usually do cookies, and so do our friends and neighbors, so this year we were thinking of making something different. This fudge, and some loaves of bread (strawberry, banana, falalala eggnog loaf, and pumpkin) would be a perfect match for a gift! Thanks for the recipe!

A quick question Becky...your recipe calls for three teaspoons of butter. Should it be three tablespoons? I usually measure butter in tablespoons...at least that is what it says on the label of my butter ;-)) Thanks for all of the fun recipes! Michelle

How are you always cooking all of these treats and not gaining weight? ha. I guess giving most of it away is the key. right? I just wanted to say hi. I'm not sure how I've missed it all this time, but I just found my way to your blog this weekend. I spent part of yesterday morning reading November thru August, and early this morning before the rest of the family was up, reading July through April.

How do you stay so thin with all your delicious dessert recipes?? You must not eat very much of them. I have no will power and if I make yummy stuff I eat it!! Then I have to spend hours at the gym every week to make sure it doesn't stick! Ha! This recipe looks delicious...I will have to try it because I think everything with mint is divine!

I've started on the fudge. I doubled the recipe, and have got the fudge layer in my Kitchen Aid as I type. It's really crumbly and not sticking together. Any suggestions?
