taco soup

This is the taco soup that I referred to in today's video clip below.

[ TACO SOUP ]

16 oz. can chili beans
16 oz. kidney beans
16 oz. can black beans
8 oz. can tomato sauce
15 oz. can diced stewed tomatoes
16 oz. can whole corn
16 oz. creamed corn
pkg. taco seasoning
1 Tbsp. chili powder
1 lb. ground beef
1 onion, chopped
1 sm. can chopped green chilies

Do not drain any of the canned foods. Add all ingredients to a crock pot and add taco seasoning to the soup. Brown the ground beef in a pan with the chopped onion and add this combination to the crock pot. Simmer for at least a couple of hours. Serve warm and garnish with optional toppings: shredded cheese, sour cream, tortilla strips (cooked in frying pan with olive oil and grated parmesan cheese). Another idea: Eat with large Fritos chips.

I love taco soup, and I think every recipe for it I've ever seen is different! LOL The one I use is very similar to this, but one big difference is that it has a pkg of ranch dressing mix in it along with the taco seasoning. Those are the only spices that go in, then the canned goodies and the ground beef or turkey. Yum!

Hey -
Looks great especially since the weather is getting cold here. But who can tell me what chili beans are? I make chili w/ kidney beans but does the can of chili beans have tomato sauce already mixed in with it? Thanks! Teresa

Hello Becky. I just want to first say that I love your blog and love that you share recipes. I love to share stuff like that and have gotten so many wonderful ones from you. Thanks.
I am so going to have to try this taco soup. I really think it is something we will all like.

I do have a question for you. In your video from the kitchen it looks like there is a picture or scrapbook or something behind you on the counter. What is it? I am just curious becuause I have pictures in my kitchen and people are always telling me that nobody puts pictures in the kitchen. So I was just wondering. Thanks and have a great day.

Oh yum, I've been on a Mexican food kick this week...can't wait to make this for dinner!

Quick question - do you know when your card kits will begin shipping? I'm planning a holiday crafting day with some girlfriends and want to make sure I schedule it for a time when I can work on my cards! Thanks!

Becky,
Your blog is such a great resource for ideas and particularly for inspiration! This is so random... for years I have been wondered how you organize your jewlery? For the most part I am organized and detailed, however I am yet to come up with a system for organization that allows me to remember my pieces without displaying all at once. Please share - I know you have lots of great pieces!

Hi Becky. I've been an admirer of yours for years, in fact when my husband and I were deciding to move to Arizona six years ago, I showed him your layouts that featured this lovely state. It helped me to see what a great place this is to live. It just so happens that we are very close neighbors. I live in "The Cliffs". So "Hi Neighbor". Hope to see you around some day.

The taco soup was WONDERFUL, I added in the packet of ranch dressing seasoning, and wowsers.

I also used chicken instead of beef. I just cooked it up, and then diced it small so that there were bites of wonderful chicken goodness along with the other bites of the soup. Thank you for sharing this with us!
