snack of the week

Perhaps I should be putting this in my Recipe section, but really -- it's not really a recipe. Just a combination of a few things. This is my favorite between-meals snack that I've been eating a lot lately.



It's also my POTD. Remember that Project 365 (and all picture-taking, in general) is a visual time capsule. What I'm doing, eating, thinking about, worrying about, seeing, liking, not liking this week may be different than next week. And certainly next year.

So whatever snack you've been reaching for lately, whether it's store-bought, homemade, or a little of both -- take a picture.

Oh, back to my current fave. It has just 3 simple things:

1. vanilla yogurt
2. fresh raspberries (SO into these right now)
3. granola

Hee! I crave that Fruit & Yogurt Parfait from McD's all the time. I finally bought some frozen berries and vanilla yogurt. Still trying to find a good granola. Where do you get yours?

De-lish! I thought of you today as I was eating a tomato/bacon sandwich. I love blueberries too on my granola and yougurt. Isn't summer food great !

Yum! I love to mix yogurt, granola, and fresh berries too. I actually had this combo for breakfast a few times last week. So good!

glad I'm not alone!! My husband hates raspberries and can not figure how how I eat them all the time. Only instead of granola I will often use crushed pecans.

Tell me... how do you get such great food photos? How do you get the lighting just right? This is an overhead shot and when I try this it is dark because I get in the way of the light. Tips??

This is my ultimate favorite lunch (with an added banana!) But it's hard finding a granola that doesn't have a ton of fat grams. Amazing how high calorie a little granola can be :(

Hi Becky...just made a big batch of granola yesterday...this recipe is awesome with greek yogurt (vanilla is my favorite too) and fresh berries, and my own granola...My college boy home for the summer must make the same "snack" as you 3 times a day..lol. I have to make a big batch of granola every week. It's very simple..just mix and bake on a cookie sheet until golden. I use about 6 cups of rolled oats, 2-3 cups of assorted nuts and seeds, 1/2 cup each of wheat germ, ground flax seed and unsweetened coconut, 1T of cinnamon and pumpkin pie spice, and one tsp of salt. Mix. In microwave safe dish mix 1/4 cup canola oil, 1/2 cup applesauce and 1/4 cup honey and 1 T vanilla-heat until bubbly. Mix and pour over oat mixture. Spread on cookie sheets and bake at 325 for about 15-20 minutes, stirring occ. until golden brown. Remove from oven and add dried fruit of your choice, and then cool on wire rack. Store in air tight container. It is AWESOME.

That is so funny that you are into this snack. I have been eating the same thing lately. We love raspberries too. :o) Trader Joe's has a vanana yogurt that goes well with this snack.
