pumpkin chocolate chip muffins

The first time I tried these was about a year ago when my friend Karolyn made them for breakfast during a girlfriends retreat/reunion. Good memories (love you guys!). What I like about these muffins (besides the chocolate chips!) is that you barely taste the pumpkin. It’s not overwhelming. Not even close.

PUMPKIN CHOCOLATE CHIP MUFFINS

1 c. flour
1 c. sugar
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground cinnamon
2 eggs, beaten
1 c. ground pumpkin (canned)
1/2 c. cooking oil
1/3 c. chocolate chips

Mix together. Fill muffin cups and bake at 350 for 20-25 minutes.

**Added note: If using mini muffin pan, just about 12 minutes is perfect in my oven. And I sprayed the mini muffin pan before filling each space half-way with the mixture. (No muffin cups.)

Super simple. When the recipe is this simple, I definitely involve the kids. Porter & Claire helped me make some today and we’re sharing with some neighbors when we go for a walk later this evening.

    This is a great recipe, I just wanted to share my alteration of the recipe to accomodate my sons' severe allergy to eggs: to replace one egg I use 1Tbsp of ground flax seed with 3Tbsp of hot water and let it thicken ten minutes, then just whisk it in to your wet ingredients. Works good and you get the added benefit of flax.

    so i have to ask- would to you do if you can't get canned pumpkin?

      You could use mashed cooked pumpkin.
      I am from New Zealand and we don’t have canned pumpkin. I roasted some and mashed it once it had cooled. Very tasty :)

        This has become a favorite of my kids…and they are super picky eaters. I didn’t tell them there was pumpkin as a main ingredient until after they had inhaled 2 each.

        I am up at all hours of the night right now making them for my daughter to take to work with her tomorrow. She is working her first Black Friday in retail and they have said there won’t be time for breaks and lunches so they are bringing potluck.

    I make the most moist and scrumptious muffins in the winter with canned pumpkin, but have never thought of adding chocolate chips. As soon as the canned pumpkin is back in the stores, I’ll have to try a mesh of your muffin recipe and mine. :)
