If ever there was a simple, easy-to-prepare, way-yummy go-to breakfast in our family, it’s these.
BREAKFAST BURRITOS
Flour tortillas (1 per burrito) – we prefer uncooked tortillas and just flip them a few times in a skillet or in a frying pan. No need to use cooking spray.
Scrambled eggs (1-2 per burrito)
Sausage (ground or links cut up)
Shredded cheese (cheddar)
Hot sauce optional (not my personal preference but some like it hot)
Put a little of everything in a tortilla and wrap it up. Complicated stuff, I know.












love these! we have them often and even will put deli turkey if we are out of sausage!!
I put the bacon (like you buy at costco in the bag) in ours- and make many in advance. My boys work in the morning and never get to eat with the rest of the family. I heat them up one and send them to school….the boys even have requests from teachers for one of their own!
I am actually making this for dinner tonight. I add hash browns also. The kids call it “Brinner” breakfast for dinner. Quick, easy, and inexpensive. Hard to find a veggie for a side but fruit works well.
Try putting salsa on the burrito! It’s not the best, but it can work as a vegetable in the meal. Guacamole would also work. You could also add in a bag of the stir fry frozen peppers and onions mix, too.

My husband eats these every morning. But he loves tons of onions, peppers and jalapenos in his.
I’ve learned a few short cuts to preparing these so that he can do it himself in about 5 minutes each morning.
We use turkey sausage and I brown it all up in advance. Then I put individual servings in small snack baggies and throw them all in the freezer. He can take out one bag each morning microwave it for about a minute and throw it in his scrambled eggs. That way I only am cooking sausage every couple of weeks.
We cut up his jalapenos, peppers and onions and put them in a plastic container in the fridge so they are ready to just dump in. Makes for a quick breakfast.
Yep, these are a favorite at our house too. We make a batch of them and freeze them for an easy microwave and go breakfast. It works great. I can get about a dozen out of a dozen eggs and a pound of meat. I’ve done bacon ones, ham (the little diced stuff from the store) and sausage. I usually buy the red, green, yellow, orange peppers and fry them up and add them to the mix to get the veggie in. VERY YUMMY!! May try hasbrowns next!
Becky, this is sofunny to me~ I’ve eaten these my entire life. Growing up in a Mexican family, my Grandma made homemade tortillas for them. We would mostly just have egg/cheese, but then we’d add sausage or bacon as we got older. LOL! We named them as toddlers, and call them “eggie tacos” (I know it’s a burrito, but my brother and I were 2 and 3!)

You can wrap them in freezer wrap and freeze them, too. Microwave for a quick morning breakfast on the run.

We also love these. We use the uncooked tortillas also. I use the pre-cooked sausage patties from Costco (in the black and red bag in the freezer section). I just pop a few in the microwave and give it a rough chop. Yum.
