trio salad

I promise I’m not a spokesperson for eMealz. We’re just happy customers who enjoy learning a lot of new, wonderful, simple, healthy recipes. So … here is yet another new favorite. This salad is comprised of the most delightfully complimentary ingredients. It is beautifully simple. I call it “Trio Salad” because of the tomato-cucumber-avocado combo.

{ TRIO SALAD }

2 cucumbers, peeled & chopped

1 pint grape tomatoes (halved if you want)

1 avocado, peeled & diced

4 tsp. cider vinegar

1 Tbsp. olive oil

salt & pepper to taste

…..

Combine vinegar, oil, salt & pepper in a jar. Cover; shake. Place vegetables in bowl. Add dressing; toss.

    What plan are you on? I haven’t seen this recipe and it looks really good! We’ve been doing the Family Walmart plan since September and LOVE EMealz! Thanks for sharing!

    I’d love to know what plan you are on. We have been doing the any store family plan and it has been great, but I would like a few more healthy options! The salad looks delicious and I love avocados!

    This looks amazing! I’ve always just had the tomato, cucumber, and onion salad, but I LOVE avocados, this would be a favorite for sure.

    Yum!!!! This was fabulous! I substituted Garlic flavored red wine vinegar for the cider vinegar and WOW!!!! LOVED IT!!!

    Did Becky ever say which plan she subscribes to? I subscribe to the Clean Eating Plan and it is full of healthy choices, they just are not real time friendly. I’m a full-time working mom of 2 and I desperately need quick, delicious and healthy.
