O’Henry’s are oh! so! wonderful! I don’t know how they got their name, but if you’re a fan of peanuts & chocolate & butterscotch … and following the easiest recipe ever … then you must try these. I made a batch this morning (tonight is scrapbook night at my house).
I got this recipe from my friend Carol, who got it from her husband’s grandmother. Not that you’d care, but I just don’t want to take credit. : )
O’HENRY’s
1 c. Karo syrup (found with other syrups)
1 c. sugar
1 c. peanuts (I got unsalted and I don’t chop them)
1 c. peanut butter
3 c. Rice Krispies
1 pkg. chocolate chips
1 pkg. butterscotch chips
Stir together Karo syrup and sugar. Microwave for 2 minutes. Add peanuts and peanut butter to the Karo mixture. Microwave everything for 1 minute. Add 3 cups of Rice Krispies. Spread into a greased 9″ x 13″ pan.
Combine chocolate chips (on bottom) and butterscotch chips in a bowl and microwave for 2 minutes. Stir until smooth. Spread over krispie mixture and cool in the refrigerator.
Remove and cut into 1-inch squares.

Does anyone know of a substitute for the Karo syrup?
Golden syrup is a substitute for Karo syrup.
We make these (minus the extra peanuts) every year at Christmas but we call them Whatchamacallits (similar to the candy bar I guess).
Actually, now that I read it, ours is a little different. We use 6 cups of Rice Krispies and I do it on the stove. I just let them set on the counter instead of in the fridge. I think the fridge makes them too hard.
Light Karo.
Those look delicious – I bet the name was derived from O’Henry Candy Bars – they seem to remind me of those.

Fiona, do you have golden syrup in Australia? You can use that. Karo syrup is just a brand name for corn syrup.

Karo syrup is corn syrup. It comes in light or dark.
Maybe there is another brand of corn syrup in Australia?

Funny, my kids just requested I make these. My mom always called them “Secret Recipe” bars. We use 6 cups of rice krispie cereal and no peanuts cooked on the stove. So yummy…I could eat the whole tray myself!
As strange as it may seem, we don’t own a microwave…is there a temp that this must reach, or is it ok to just cook it on a dbl boiler until melted?
